Dutch Oven – Dutch Oven Garlic Roast

Dutch Oven Garlic Roast

Ingredients
1 5 lb roast
1 whole sweet onion diced
10 med potatoes cut into cubes
2 lbs of carrots cut into cubes
2 cloves of garlic diced
5 cloves of garlic whole
Salt and pepper
Italian Seasoning

Instructions
Poke holes in the roast and insert the garlic. When done use 3-4 tbs salt, pepper and italian seasoning and rub all over the roast. Place roast in into dutch oven and cover with half the onions Add the carrots and potatoes. Add the rest of the onions and diced garlic. Add 1/2 cup of water, cover and place on hot coals. Add 10-20 coals to the top and allow to cook for 2 – 2 1/2 hours. Check and if vegetables are not tender then cook for an additional hour and check again.
